Adds a Spanish translation of the README at docs/README_es.md.

Why?

Spanish is the second most spoken native language globally with ~500M speakers. This translation makes Ollama's documentation more accessible to the large Spanish-speaking developer community in Latin America and Spain.

  • Covers all main sections: installation, quickstart, API usage (Python/JS), documentation links
  • Natural Mexican Spanish localization (not machine-translated)
  • Includes a back-link to the English README
