fix: correct @ngbolin contributor placement (book -> tinytorch)

- Remove @ngbolin from book/.all-contributorsrc (incorrectly added)
- Keep @ngbolin in tinytorch/.all-contributorsrc with 'doc' type
- Regenerate README tables
