Starting from v1.0.0 docling has renamed its endpoint /v1alpha/... => /v1/ we need to update it here

Breaking Changes

Docling endpoint change: docling-serve version below v1.0.0 no longer supported, update docling-serve to latest version if you are using docling for document ingestion
