I think it would be nice to render mcp resources via packages like mcp-ui. This would make the chat experience more interactive for the users

I have the same question, it would be great to support mcp-ui. There are a growing number of alternatives like LibreChat that support mcp-ui (https://mcpui.dev/guide/supported-hosts) and it would be great for OpenWebUI to be on that list
