I understand why ollama executable might be added to $PATH. For me it's convenience that particular executable will be found in user's $PATH folder. The downsides of the process are locations are predefined, they can't be changed or step entirely skipped (under users' conscious choice).

Could you please add this option and an ability to repeat the step if needed.

@eirnym in addition to the installer, we also provide a stand-alone CLI for macos that you can download if you want more control over install location and behavior. You'll be responsible for running the server though, so the installer is definitely the simpler and preferred approach.
