I think hMailServer fills all enough requirements of a self-hosted app. You might create a PR.

Sorry, I made a search and it turned out that it was already added to a Non Free list. https://github.com/awesome-selfhosted/awesome-selfhosted/blob/master/non-free.md

It was marked as proprietary which is not true but given that it works only on Windows I agree to leave it in that list
