This PR just updates some bits of information about Espressif projects:

Fix broken/moved URLs for The Rust on ESP Book, the no_std training and the std training.
Update training descriptions.
Add missing PAC crates for newer Espressif chips: esp32c5, esp32c61, and esp32p4 (all in esp-rs/esp-pacs, all published to crates.io)
Reorder the Espressif HAL section to list esp-hal first (alphabetically correct)
