This commit updates the .editorconfig file to streamline its focus.
It removes C# specific settings and configurations for project/config files.

It now includes configurations for Kotlin and common file types like JSON and YML.

Adds Kotlin-specific rules to enforce trailing commas on declaration and call sites for improved readability and maintainability.
