Description

Handles the normalisation of some common non-latin diacritic characters. I opted to just add a small map rather than introducing a new dependency that handles this as I figured this probably affects a very small number of people, and we would not have much use for the mapping of more niche diacritic character.

Note, the case of ü having some ambiguity was brought up in the original issue, however this already gets handled by the existing normalisation, going to u.

Testing

Added new test file, for some basic normalisation cases, plus the new characters. Also manually tested the scenarios from the raised issue.
