Description

Sometimes users abruptly quit the app or do other things that interrupt writes mid-process. This can corrupt the global prefs file and thus next time we load the app - the user loads without any prefs.

This PR changes how we do writes. We do them to a separate file and then once complete - copy the new file to replace the old one.
